Centered in the vibrant capital of Antananarivo, this experience brings you face-to-face with the people, ingredients, and traditions that define Malagasy cuisine. From the bustling energy of Analakely Market to intimate kitchens and rural farms, every moment is curated to deepen your understanding of food as culture.
You will walk through markets filled with heirloom rice, wild greens, dried fish, and fragrant spices. You’ll taste street foods like mofo gasy and masikita, and sit at tables where meals are prepared with intention and history. At renowned local institutions like Sakamanga and La Varangue, you’ll experience how traditional flavors are preserved, elevated, and reimagined.
Beyond the city, the journey continues east to the lush landscapes of Andasibe — a region rich with smallholder farms growing vanilla, cinnamon, and wild pepper. Here, you’ll learn directly from farmers, exploring the journey from soil to plate. You’ll gather ingredients, cook over open fires, and experience the deep connection between land, food, and community.
This is not a passive tour — it is a culinary exchange. Throughout the week, you’ll collaborate with Malagasy chefs, share techniques, and explore the connections between African American foodways and Malagasy traditions. The experience culminates in a powerful legacy dinner, where participants co-create a menu that reflects both heritage and innovation.

The cost of the tour per person is: $3600
Registration with deposit is due July 1, 2026, to hold your spot. Space is limited to 10 people. The first 10 to register.
*The $500 deposit is refundable within 30 days of payment only at the time of registration that will hold your spot. An invoice will be sent after the registration has been submitted. You can decide to make monthly payments using the same invoice @$517 per month.
